- Empanadas - wraps made by folding a dough or bread patty around the stuffing. They could contain: ham, cheese, meet, onions, etc.
- Locro - hearty thick stew. The defining ingredients are corn, some form of meat (usually beef, but sometimes chorizo), & vegetables.
- Asado en Cruz - technique for cooking a lamb on a cross.
